This One Pot Pesto Tortellini is quick, easy and so delicious my husband asks me to make it for his birthday every year. It’s definitely a family favorite of ours.
It doesn’t hurt that it’s one of the easiest meals to make either. Honestly, that’s the best part. How is something that is so easy to make SO delicious? The world may never know. Or maybe it’s just science. I’ll leave it to science and the rest of the cooks of the world.
This is perfect for the parent(s) that are super busy and need something to whip up really quick. Can I just say that having a meal like this to whip up is kind of a life saver? I was watching TikTok and saw a young, single girl with no kids ask how us moms take care of other humans because she could barely take care of herself. Honestly, I don’t have an answer but it all works out. Easy recipes definitely help.
One Pot Pesto Tortellini
Here’s what you’ll need:
- Cheese Tortellini
- Baby Spinach
- Basil Pesto
- Parmesan Cheese
- Pot
How to reheat:
Add your pasta to a sealed container and store in the fridge. When you’re ready to reheat, add to the microwave for about 1 1/2 to 2 minutes. It’s just as good as it was fresh.

First, boil your water in a large pot.

Next, add in your tortellini and cook according to the package.

The last 30 seconds, add your spinach to your boiling water.

Remove from heat drain the pasta and spinach.

Add your basil pesto to the pot along with your tortellini and spinach. Gently mix until all noodles are coated.

Lastly, add salt and pepper to taste. Add some parmesan on top and serve!
