These Crock Pot Corned Beef Tacos are a MUST HAVE for your St. Patty’s Day party! Packed with flavor and an all time staple for this time of year.
I typed up this recipe as a single serve but we usually make this large roast for our St. Patty’s Day family get together. Or, you can also make the roast and keep it in your fridge all week for meal prep. It reheats really well and easy to assemble fresh new tacos.

Crock Pot Corned Beef Tacos
I make it every year and then after the holiday’s forget to make it again. It’s extremely simple to make – which is great for when you have to cook a lot of items for a party! Just add your corned beef roast in a crockpot and cook it all day. Then you can chop up whatever things you like to put on your tacos. Staples for me are cotija cheese, cilantro, onion, cabbage and some type of hot sauce.
What else can I make with my corned beef?
A ton of stuff! Not only can you make delicious tacos, you can make it for breakfast with eggs and potatoes, turn it into a stew or even fried rice. I have a fried rice recipe here on the blog, just swap the protein for your corned beef.
Here’s what you’ll need:
- Corned Beef
- Beef Broth
- Mini Corn Tortillas
- Cabbage (Optional)
- Onion
- Cotija Cheese
- Cilantro
- Hot sauce
- Plain Greek Yogurt
- Mayo
- Garlic Salt
- Lime Juice
Directions:
- Add your corned beef roast into your crockpot with 1/2 a cup of beef broth and the seasoning packet that it comes with. Turn it on high for about six hours or low for 8.
- While your corned beef is in the crockpot, chop your cilantro and onion.
- In a small dish, mix your white sauce – the greek yogurt, mayonnaise, garlic salt and lime juice.
- After your corned beef is cooked, it will shred really easily. Then, assemble your tacos!
