As it starts to cool down, it’s the absolute perfect weather for my Easy and Healthy Crockpot Chili. My favorite part of this dish is – you guessed it, it’s easy. It’s the perfect meal for families or for meal prep during the work week. Another plus is that it heats up very well for lunch.
I made this last week for the family while we watched some Halloween movies. The girls absolutely loved it! For dessert, we had some of my delicious low calorie brownies. It’s important to have dinner together as a family and spend quality time with one another. You guys see me eating alone on TikTok, where sometimes it may be the case, but for the most part we eat together.
Easy and Healthy Crockpot Chili
The combination of the meat, veggies and all the right seasonings makes it a wonderful blend of flavors.
Can I use a different meat?
Yes, you may use ground turkey, beef or pork but I personally love a lean ground turkey.
Is Crockpot Chili good for meal prep?
Yes! It is perfect for meal prep for the week or it freezes really well. I love keeping it in the freezer for busy weeks where I don’t have time to meal prep or make dinner every night.
Here’s what you’ll need:
- 1 pounds ground turkey
- 1 cup of chicken broth
- 30 ounces of kidney beans
- 15 ounces of fire roasted tomatoes
- 15 ounces of can tomato sauce
- 2 zucchinis
- 1 medium onion
- 1 1/2 tbsp chili powder
- 1 1/2 table onion powder
- 1 1/2 tbsp garlic powder
- 1 tbsp cumin
- 1 tbsp oregano
- 1/2 tbsp paprika
- 2 tsp salt
- 1 tsp pepper
Directions:
- In a pan brown 1 lb of ground turkey with a pinch of salt and pepper.
- In another pan, sauté you onion and zucchini for a few minutes. Be careful not to overcook them because it will finish cooking in the crockpot.
- Next, add all your ingredients into your crockpot and stir. Cook on low for four hours.
- You can top with a dollop of sour cream or greek yogurt.
