This Spinach and Feta Frittata is absolutely perfect for New Years brunch! A great, delicious and easy way to impress your friends and family for the new year.
Whenever I heard about people making egg frittatas, it sounded so fancy. And we all know, I’m not a fancy gal. I like on the go, easy recipes and this did not sound one bit like that. It reminded me of something you would have at a brunch or company party paired with mimosas.
To my surprise, egg frittatas are SO easy to make! Like, it can be an every day breakfast if you want it too and reheats so well.
Spinach and Feta Frittata
What is a frittata?
A frittata is similar to an omelette except that its ingredients are mixed in. It also finishes cooking in the pan so the eggs rise and soufflé. Whereas the omelette are added to a folded sheath of eggs.
Can I use different vegetables?
Yes, of course! Just be sure to cook the vegetables a bit beforehand. You can also add in turkey sausage or bacon!
Here’s what you’ll need:
- Butter
- Minced Garlic
- White Onion
- Fresh Baby Spinach
- Eggs
- Low-Fat Cottage Cheese
- Salt
- Pepper
- Crumbled Feta Cheese
- 9 inch non-stick skillet
Directions:
- Pre-heat your oven to 375 degrees.
- Chop your onion and spinach.
- Melt the butter on a 9 inch non-stick skillet over medium heat. Add your onions and sauté for about five minutes.
- Add minced garlic.
- Add the spinach and sauté for about two minutes or until wilted.
- Remove from heat.
- Meanwhile, whisk the eggs in a mixing bowl with the cottage cheese and pinch of salt and pepper.
- Pour the egg mixture over the veggie mixture and sprinkle with feta cheese.
- Bake in the oven for about 25 minutes or until the sides are slightly browned.
- Remove from heat and let cool slightly before cutting. Sprinkle with the remainder of your feta cheese, cut and enjoy!
