A warm batch of these Skinny Banana Brown Sugar Muffins is the absolute best way to start your morning. They pair nicely with your hot cup of coffee and some fruit on the side. You can even add some to your coffee to sweeten it up.

Creating a balanced “diet”

Where using brown sugar is perfectly fine, I like to provide you guys with “healthier” and lower calorie options. This way you can eat more throughout the day and pack in those fruits and veggies. Plus, when you use Splenda products, you can’t even tell the difference so why not take the lower calorie option? Their brown sugar is half the calories of traditional brown sugar. They use a mix of Splenda Sweetener and brown sugar to bring you great taste with less calories. In addition, it baked SO well with these muffins.

What’s the secret to keeping the muffins moist?

The secret is using really ripe bananas and the greek yogurt. This will keep the muffins flavorful, sweet and not dry at all.

Would these be good for meal prep?

Yes, yes, yes, YES. These are amazing for meal prep. I love to meal prep because I’m a grab and go kind of girl so these come in handy. Especially when I’m making my breakfast and lunch along with the girls. Now, my daughter Rae who has a food allergy can’t have them but my little Sloan loves them! A sweet treat for my girl. Although, since Rae can’t have these, I will prep her some of my Vegan Chocolate Chip Muffins and use Splenda Monk Fruit since it’s vegan friendly too. My poor girl! I feel so bad so I always make her feel included with something similar she can eat.

Baking tips!

Splenda provided some awesome baking tips when using their products if you need them. Something to remember when using their Sugar Blend products is that when substituting for sugar in recipes, use half the amount of what you would use with regular sugar. They have a conversion chart on their site that can calculate this for you! It looks like the one below. Of course, this recipe is already measured out to perfection! Their Monk Fruit Sweetener measures 1 to 1 though so no table or math necessary!

  1. Pre-heat your over to 350 degrees.

  2. In a mixing bowl, start by mashing the bananas. Then, add your egg, vanilla, streusel mixture (see below) and greek yogurt.

  3. In a separate bowl, mix together flour, baking soda, baking powder, and salt.

  4. Combine the wet and dry ingredients and mix.

  5. Grease a muffin tin and fill 3/4 full with batter. Top with streusel topping and add to oven.

  6. Bake for 18-25 minutes or until toothpick comes out clean. Enjoy!

Streusel Topping

  1. Combine 1 tbsp Splenda Brown Sugar, 2 tbsp Splenda Monk Fruit and 1 tsp cinnamon.
