Peter’s Perfect Crispy Potatoes are such a crowd pleaser. Seasoned to perfection with the crunchy outside has made this an amazing side dish to any meal. Plus, they’re quick and easy to make! If you don’t know already know, Peter is my husband!

Now, Peter is the type of person who is the worst at recipes so it made this hard. He doesn’t time anything or measure anything and goes off feel and what he thinks is right. Which is fine until you have a wife with a food blog that wants to share his amazing potatoes!

I swear we had to make this 4-5 times just to perfect it but it was worth it. It was nice being the certified taste tester and assistant to the cook this time. Usually it’s me and one of my daughters – Sloan or Rae. I have to say, the assistant position is really fun. I could get used to this.

He’s also really good at cooking meats on the smoker – like these ribs! Those were amazing. This night we paired it with some of my roasted cauliflower too.

Peter’s Perfect Crispy Potatoes

Here’s what you’ll need:

  • Baby Gold Potatoes
  • Avocado Oil
  • Garlic Salt
  • Onion Powder
  • Paprika
  • Salt
  • Pepper
  • Parsley

Directions:

  1. First, take your baby potatoes and chop them into fourths.
  2. Add them to a large microwave safe bowl, cover with a damp paper towel and microwave for 5 minutes.
  3. Next, take them out, give them a stir and microwave for another 4 minutes.
  4. Then, get your cast iron or pan smoking hot and add oil.
  5. While the potatoes are in your bowl or after you add them to the pan, go ahead and give them a good season. It is really based on preference but if you would like measurements – I’d do 1/2 a teaspoon of all the seasonings and a few pinches of salt and pepper to taste.
  6. Sear for 2-3 minutes, stir and repeat.
  7. Lastly, garnish with some parsley and enjoy!
