Another thing I love about this “salad” is that I always have all the ingredients in my house. That eliminates me running to the store which I am always a fan of.

This salad can be eaten right away and still be absolutely delicious BUT it’s also amazing cold. Since it is so easy to make, I like to pop it in the fridge the night before if I can. That way every bite is cool, fresh and crisp and accompanied by a warm tortilla chip. I also like to add some cilantro on top for garnish.
Swaps you can make for a macro friendlier version
I like it just as it is but you can always swap the mayo for light mayo or greek yogurt.
If you want to boost the protein, you can even toss in some beans.
What main dishes is the salad good to pair with?
Seriously anything! You can do a taco night, burrito bowls, ribs, chicken, veggies, etc. It’s obviously amazing and pairs perfectly with Mexican food – one of my favorites. I love to have some freshly made guacamole, queso dip and corn salad. The iconic trio to have for any taco Tuesday night.
