Today I am going to show you how to make delicious keto chicken on the traeger. An absolute favorite of mine! We love to barbecue and when I say WE, I really mean my husband. I love the food that comes off the barbecue. We got a Traeger smoker grill when we moved into our new house and to say we absolutely love it is an understatement. You can cook almost a whole chicken on it at one time!! It really does it all and all at once too. Just throw your veggies on there as well and they cook so quickly! It’s also perfect for summer so you don’t have to heat your house up with your oven. This has become our new favorite way to meal prep. We can do 8 to 10 chicken breasts and two sheet pans of roasted veggies and have it for the entire week. AND it feed our little family of 4!
Delicious Keto Chicken on the Traeger
Set traeger to 450°. When the traeger reaches 450°, let it preheat for 15 minutes to let the whole smoker come up to temp.
While that’s happening, take the chicken out of the fridge and let it rest at room temperature for 30 minutes.
To season the chicken, top with a little bit of avocado oil. Avocado oil can withstand high temperatures. Then, you will want to coat it with your favorite spices. I love to top it with my homemade taco seasoning.
Sear the chicken on each side for about five minutes on the bottom rack.
Place the chicken on the middle rack and drop the temp on the traeger to 350 degrees. Let it cook until the chicken comes to temp at 165. It usually takes about 10-15 minutes.
Remove the chicken from the traeger and cover it with foil. Let it rest for at least 15 minutes. This will ensure that all the juices are locked into the chicken. If you cut into it right away, the juices will drain out and you will end up with dry chicken.
Cut and ENJOY. It's so yummy! Also, great for meal-prep.
