You are going to love these macro friendly Banana Bread Protein Muffins. They’re the perfect grab-and-go breakfast or snack, and they taste like you slaved all day. These are great for people on the go since you can throw them together in minutes!
I’m always looking for more ways to increase my protein and these muffins are the perfect way to do that. Meal prepping them in the beginning of the week and storing them in the fridge makes them an awesome grab and go snack. I can easily pack them in mine, Peter’s or Sloan’s lunch.
Banana Bread Protein Muffins
Here’s what you need:
- Rolled Oats
- Peanut Butter Protein Powder
- Egg Whites
- Splenda
- Baking Powder
- Banana Extract
- Water
- Greek Yogurt
- Swerve Powdered Sugar
- 12 Muffin Pan
Are these breakfast or dessert muffins?
These are whatever you want them to be! You can eat them for breakfast, lunch, dinner or a snack. If you’re going to eat them as a meal, be sure to add another little side or some coffee! I like to add some fruit or veggies on the side to increase the nutrients.
Are these good for kids to eat?
Yes! They’re the perfect amount of sweet that I think your kiddos will love.
I don’t have banana extract – can I use bananas?
Of course – just remember that the macros will change and be sure to calculate them into the total. I would mush the bananas until you can get it to a smooth consistency.
No icing ingredients?
No icing? No problem. I love to dip these muffins in my all time favorite syrup – Walden farms. It’s zero sugar and zero calories – making it an awesome dipping sauce for them.
