85 Calorie Pumpkin Baked Oats are an amazing way to start the morning. Made with pumpkin puree and sweetened with Walden Farms maple syrup and pumpkin pie spice.

I can’t believe Summer is coming to an end. It’s already September 1st? Still feels like 2020 to be honest. With that being said, we are quickly approaching Fall or as some may call it, Pumpkin Spice Latte season. If you guys have been following me for a while, you know I love all things Fall and pumpkin. Here’s what you’ll need:

  • Ramekin – I found these on Amazon for only $17 and I love them. They’re perfect to serve with when you have guests over – add in desserts, nuts, appetizers, dips, etc. For some reason it makes me feel like I’m more put together. Or maybe one day you’re just feeling fancy and want to make a yogurt parfait in it. They’re the perfect serving size.
  • Rolled Oats
  • Pumpkin Puree
  • Walden Farms Maple Syrup – I LOVE this syrup. It’s the best zero calorie zero sugar syrup.
  • Unsweetened Almond Milk – I use almond milk but you can use any milk you have. I like this because it’s low calorie. Don’t forget to adjust the macros if you swap the milk.
  • Pumpkin Pie Spice – I got mine from Amazon but I’m sure your local grocery store will have this too. I don’t like to risk going to the store and them not having it so I just get it online.
  • Baking Powder
  • Eggs
  • Salt

Make it a meal

It’s great by itself as a midday snack or dessert but definitely needs more to make it a meal. I like to add fruit and pair it with my coffee. If it’s a snack, sometimes I’ll pair it with some veggies either dipped in Bolthouse ranch or with the ranch seasoning sprinkled on.

  1. First, add all your ingredients to a blender and blend until smooth.

  2. Next, grease 4 ramekins and add batter evenly to all.

  3. Bake for 20-25 minutes until toothpick comes out clean.

  4. Lastly, I like to top mine with walden farms maple syrup.
