Today we are making this delicious Toasted Coconut Margarita. It’s smooth, creamy, refreshing and topped with crunchy coconut. It’s perfect for pool day in sunny San Diego.

During San Diego “winter,” we get more than a few pool days still. Sorry to brag!

If you know me, you know I LOVE margaritas but you may not know I am obsessed with coconut. So I guess it goes without saying, I am obsessed with coconut margaritas.

There was a restaurant that my husband took me to on our anniversary one year that served a coconut margs and I obviously fell in love. With the margarita and my husband all over again LOL. I couldn’t stop thinking about it after. We were talking about that night the other night so it reminded me of it so you know I had to make it for the blog.

This would be perfect to pair with my Cilantro Lime Shrimp Tacos. A nice family dinner on the patio with margs, tacos and the sun setting in the background – my simple pleasures.

Personally, I love ma margarita on the rocks but if you add some fresh ice, you can blend it to make it frozen. I coat the rim with Agave, dip it into some toasted coconut and garnish with a slice of lime.

Now, the most important ingredient is the Coconut Cream so be sure to purchase it on Amazon beforehand. I can’t always find it at my local grocery store.

Toasted Coconut Margarita

Toasted Coconut Margarita

Here’s what you’ll need:

  • Unsweetened coconut shavings 
  • Coconut Cream
  • Tequila
  • Grand Marnier
  • Lime Juice 
  • Agave
  • Lime
  • Toasted Coconut

Directions:

  1. In a pan, toast your unsweetened coconut shavings on medium heat. It will only take a few minutes. You’ll slowly start to see the coconut shavings turn golden brown.
  2. Once they are a nicely toasted, remove from heat and set aside.
  3. Rim you glass with the agave and dip in the toasted coconut.
  4. Add fresh ice to your glass.
  5. In a separate glass or shaker, add tequila, grand marnier, lime juice, and coconut cream. Shake or mix well.
  6. Pour over ice and garnish with a lime. Cheers!
