These Loaded Cauliflower Nachos will blow your mind. Low calorie, low carb, keto and gluten free? Yeah, I was sold at the word nachos. There’s a ton of great low carb chip options out there and you can easily make your own but I’m mixing it up a bit. Mostly to make things a bit interesting but also because cauliflower is one of my favorite vegetables. I know what you’re thinking… you’d rather have chips. I get that but just give me a chance, okay? I’m going to change your mind and you’ll be eating more veggies. That’s a huge plus.


This recipe has 8 g of net carbs and if you’re doing keto, that may be a little high for you. If so, you can omit the tomatoes. When making this recipe, the serving size will be 1/4 so you can split it up, meal prep it or just add it to the middle of the table and let your family dig in. That’s what my girls and my husband did.

This was such a fun meal for a family dinner. It would be great for any party or gathering.


HOW TO MAKE LOADED CAULIFLOWER NACHOS:

The key to getting your cauliflower perfect is slicing them into even pieces and seasoning it with my homemade taco seasoning. This way it cooks evenly and the seasoning brings the cauliflower to life.


Cut your cauliflower into thin slices, as in “cauliflower chips.” If some pieces are too big or too small they can end up over cooked or soggy.


While you’re roasting your cauliflower, brown the ground turkey in a medium sauce pan over medium heat. It’s very simple, I just spray the pan with a little bit of non-stick cooking spray and add the ground turkey and seasoning. 
After the cauliflower roasts for 20 minutes, I remove it from the oven. I like to stir or flip them over and then I top with the crumbled ground taco turkey meat and cheddar cheese. I put them back into the oven for five minutes or until it gets ooey gooey and delicious.


After, I top with cilantro, avocado and tomatoes.


SAUCE: 

I love a good dip or sauce. greek yogurt is my favorite swap out to add seasoning to and make a great dip. All I did for this was add a dollop of greek yogurt, splash of salsa or hot sauce (I use Tapatio) and that’s it. It takes the dish to the next level.


For some additional heat, top with jalapeños or any salsa of your choice.

  1. Pre-heat the oven to 425° and line a baking sheet with parchment paper.

  2. Chop your cauliflower into florets and try to keep them around the same size for even cooking.

  3. Coat the cauliflower in avocado oil and my homemade taco seasoning.

  4. Lay the cauliflower onto the baking sheet and roast in the oven for 20 minutes.

  5. While the cauliflower is cooking, brown your ground turkey with 1 tbsp taco seasoning.

  6. When the cauliflower is done, top with the taco seasoned ground turkey and cheddar cheese.

  7. Add back into the oven for five minutes or until the cheese melts.

  8. Take 1/4 of your greek yogurt and mix it with your favorite hot sauce. I use Total 2% greek yogurt with tapatio.

  9. Garnish with tomatoes, cilantro, avocado, spicy yogurt dip and whatever other toppings you like.
