This quick, easy, cheesy and flavorful Loaded Enchilada Casserole Salad for the family or meal prep is sure to please any crowd! With just a few ingredients in the kitchen and 20 minutes on the stovetop, this entire meal comes together without a hassle. Plus it’s low calorie!
This makes one portion but you can easily up the serving size for how many people you have. I like to add it to a bed of lettuce to create more volume.
I love casseroles because you can throw everything in and pop it in the oven or even cook it on the stovetop. While this enchilada casserole is usually made with tortilla chips, I found it easier and quicker to use rice. You can either layer some tortilla chips or add in some old pre-made rice from the fridge.
Loaded Enchilada Casserole Salad
Here’s what you’ll need:
- Ground Turkey
- Jasmine Rice
- Red Bell Pepper
- Red Enchilada Sauce
- Plain Greek Yogurt
- Chopped Cilantro
- Onion
- Shredded Lettuce
Directions:
- In a skillet, take your cooked ground turkey and jasmine rice and add it to a medium heated pan.
- Next, add your enchilada sauce and warm.
- In another skillet, get it smoking hot and add a little cooking oil. Add your red bell pepper and let it cook for a few minutes without stirring. We want that beautiful char on these peppers.
- To a plate, add your shredded lettuce and then top with your ground turkey and rice mixture. Then, top with your cilantro, onion, plain greek yogurt and hot sauce. The hot sauce is optional but highly recommended.
