Today I made some Jalapeño Watermelon Salsa and it was surprisingly delicious. I say this because I am not a huge fan of fruit in salsas but I really liked this one. It was the perfect combination of the sweet watermelon, spice and fresh ingredients.
This salsa paired with my Street Corn Salad and my Cilantro Lime Shrimp Tacos would be the absolute perfect Summer dinner on the patio. Although, it can be enjoyed any time of the year it’s best during Summer when the watermelon is in season.

Tips for making watermelon salsa
Prep Time – If you’re putting this together for a get together or party, try to prep the ingredients ahead of time. It makes it easier on you the day of to throw it all in a bowl and toss it together so it stays fresh. Plus, it keeps your space clean and tidy. The day of a party the last thing you want to do is prep, cook AND clean.
How long is it good for?
It’s best enjoyed fresh but if you have some left overs, it can be stored in the fridge for 1-2 days. Although, I can almost guarantee you won’t have any left over! This is a huge hit at parties.
How to pick the best watermelon
First, I pick up the watermelon and make sure it’s fairly heavy. This will mean there’s lot of juice. Second, I always look for a big yellow patch. Watermelons will develop a field spot when growing. Lastly, I give it a good knock and make sure it doesn’t sound hollow.
What are some meals I can pair this with?
Obviously this is amazing with just chips and guac. That’s a given. Chipotle tortilla chips to be exact. You can also pair this with tacos – I prefer it on shrimp or fish tacos or burrito bowls.
