Frugal Friday Poor Man’s Ceviche is going to have your mind BLOWN. It is fresh, crunchy, and super low calorie.

Don’t get upset at the name – I got this recipe from my coworker Ben and he told me I absolutely have to call it this. He said I needed to share it for my Frugal Friday series and he was so right – I can confidently say that this definitely needed to be shared with the world. It’s cheap, delicious, super low calorie, and high protein.

Frugal Friday Poor Man’s Ceviche

Here’s what you’ll need:

  • 1 Can of Tuna
  • 1 Stalk of Celery
  • 1 Mini Cucumber
  • 13 cup Cilantro and Onion (Chopped)
  • Salt to Taste
  • Pepper to Taste
  • 4 Mission Corn Tortillas
  • 2 Juice of Lime

Equipment

  • Veggie Chopper – This veggie chopper was life changing. It was in my Amazon cart for MONTHS and I just put it on the back burner never fully following through with purchasing. Big regrets. This thing is my new favorite kitchen gadget and I can’t believe I went so long without one. I should have pulled the trigger a long time ago but I didn’t know it was a legit necessity until now. It has made my life so much easier and it really cuts down the recipe prep time tremendously.
  • Mixing Bowl – These are my all time favorite mixing bowls. If you’ve been here from the beginning, you know I’ve been using them ever since. I love how they come in all different sizes from large mixing bowl to a small dipping or spice bowl.

Snack or Meal?

The best part of this being low calorie and high protein is that you can build on it. It can either stay how it is and be a mid day snack or make it into a meal. If I were to make it a meal I’d maybe add some veggies and a taco or two on the side.

  1. First, chop all your veggies. If you don't have this veggie chopper from Amazon, you need it now! I don't know why it took me so long to buy but it's a necessity, I swear.

  2. Next, add your tuna, veggies, lime, salt, and pepper to your mixing bowl and mix.

  3. Over medium high heat, lightly spray your pan with cooking oil and cook your tortillas for a few minutes on each side or until crispy - like a tortilla chip or tostada. 

  4. Top your ceviche with some tapatio or your favorite salsa, dip, and enjoy!
