Okay, let me start by saying this is not my recipe for No Bake Monster Energy Cookie Bites but I’ve seen it all over Pinterest. I’ve made energy bites very similar but these were just too cute to pass up. I made a few small tweaks to the recipe but not much were needed.
These are great for when you’re busy and need something quick and on-the-go. Plus they’re also great for kids! My kids loved these and they’re great for an after school snack or their lunches. The colorful little M&Ms make the girls so excited to munch on these.
I made some No Bake Peanut Butter Pumpkin Bites during the holidays and they were amazing. I knew I had to make another version of them. Something fun, yummy and low calorie. Just a few of these will curb your sweet tooth and fill you up to keep you full before dinner time.
I mean by now, you guys know I have a sweet tooth. I NEED somethin’ sweet after dinner. Even if it’s just a little energy ball.
No Bake Monster Energy Cookie Bites
Here’s what you’ll need:
- Quick Oats – These give the energy balls their chewiness and their base.
- Peanut Butter – A mix of PB and honey is what holds these together.
- Honey – The glue to it all.
- Mini M&Ms – Crunchy and sweetness.
- Mini Chocolate Chips – A little more chocolate never hurt nobody.
- Splash of Vanilla Extract – A bit of vanilla flavor.
- Mixing Bowl – I love these from Amazon!
Directions:
- First, add all your ingredients to a medium size mixing bowl and combine well.
- Next, shape into 1 inch balls and place on a plate with parchment paper.
- Add into the fridge for 20 minutes.
- Lastly, store in a tupperware or ziploc bag in your fridge.
