How many of you love shrimp alfredo pasta? I know I do, so I wanted to make a low calorie and low carb version of it. Of course, carbs are not the enemy and you can have pasta if you’d like, I just prefer to volume eat with tons of veggies to stay full. I substituted the noodles for zoodles (zuchinni noodles) but feel free to use any pasta you prefer such as miracle noodles, banza pasta, spaghetti squash, etc. I love meal prepping this for the next few days as well so I can grab and go.
