Keto Pumpkin Chaffle

This Keto Pumpkin Chaffle was so good! I don’t know about you but I am ready for everything Fall. Pumpkin pie, pumpkin coffee and definitely some pumpkin chaffles.

Don’t be turned off by the cheese, I promise you won’t be able to taste it at all. I used mozzarella cheese because it’s very light in flavor so it can take on the flavor of the pumpkin very nicely. Adding in both the pumpkin pie and the pumpkin pie spice, it was unreal. I cannot wait for you guys to try it. You can catch me all fall with a pumpkin chaffle in one hand and a pumpkin latte in the other.

For this recipe, I topped it with some coolwhip but you can also use sugar-free syrup, cream cheese frosting or whatever sweetness you’re craving that day! I like both savory and sweet meals in the morning, so I like to mix it up. If you can relate to me, you’ll love my monte cristo sandwich. It’s the perfect combo of sweet and savory. Also, a great hangover cure. I know there are people who are one or the other, so my sweet friends, this one is for you. My husband loves them as well.

Why I love these chaffles:

For two chaffles, it’s only 265 calories so you can easily satisfy your sweet tooth without risking a ton of your calories for the day. Even if it was more calories, I would have given you permission to treat yourself! BUT if I can make a “healthier” or a lower calorie version. I’d much rather have that. As long as it doesn’t sacrifice the taste and consistency. That’s entirely my opinion and I completely understand if a real pumpkin waffle is what you want.

I will always say that you can have anything in moderation, so don’t hold yourself back from something you really want. Down the road, it may get in the way of your progress and you’ll be stuck in the cycle of “starting on Monday.” I know we’ve all been there and guess what? That’s okay. We are in this together, so let’s enjoy this delicious pumpkin chaffle together. Cheers!

KETO PUMPKIN CHAFFLE

HERE’S WHAT YOU NEED:

  • Mozzarella cheese 
  • An egg
  • Pumpkin purée
  • Pumpkin Pie Spice
  • Cool Whip
  • Sugar free syrup (I like to use Walden Farms)
  • A Baby Dash or a waffle maker

Ingredients

Instructions

  1. Plug in your baby dash waffle maker to warm up. Or any small waffle maker that you have.

  2. In a medium bowl, combine mozzarella cheese, egg, pumpkin purée and pumpkin pie spice. Whisk together well.

  3. Spray the mini waffle maker with some nonstick cooking spray.

  4. Add half of the batter to the waffle maker. When the indicator light goes off, it is done. It usually takes about 3 to 4 minutes.

  5. When the light goes off, remove the mini chaffle and repeat the steps for the second chaffle.

  6. I top each chaffle with 2 tablespoons of coolwhip, sugar free maple syrup and a sprinkle of pumpkin pie spice on top.

  7. Enjoy!
