Pre-heat your oven to 375 degrees.
Chop your onion and spinach.
Melt the butter on a 9 inch non-stick skillet over medium heat. Add your onions and sauté for about five minutes.
Add minced garlic.
Add the spinach and sauté for about two minutes or until wilted.
Remove from heat.
Meanwhile, whisk the eggs in a mixing bowl with the cottage cheese and pinch of salt and pepper.
Pour the egg mixture over the veggie mixture and sprinkle with feta cheese.
Bake in the oven for about 25 minutes or until the sides are slightly browned.
Remove from heat and let cool slightly before cutting. Sprinkle with the remainder of your feta cheese, cut and enjoy!
