Lucky Charm Leprechaun Bait

In anticipation of St. Patrick's Day, I decided to make Lucky Charms Leprechaun Bait! Lucky Charms is the official cereal of St. Patrick's Day right? I only just found out this year it was such a thing (don't ask me how) and after hearing one of my friend's made leprechaun traps for their kids, I couldn't resist trying my hand at making my own delicious little treats.

It's similar to rice crispy treats except so much better because it has the Lucky Charm's marshmallows in it. This recipe is so cute and my girls loved it! I love creating new holiday traditions. We leave the bait out for the leprechaun on Saint Patty's day. It's similar to Santa's cookies and makes for such sweet memories.

This recipe was inspired by a recipe I found on the Chex cereal website and I just made a few adjustments.

Lucky Charms Leprechaun Bait

Here's what you'll need:

  • Chex Cereal 
  • Lucky Charm Cereal 
  • Butter
  • Splash of Vanilla 
  • Mont Fruit sweetener
  • Monk Fruit Powdered Sugar
  • Lily's Chocolate White Chips
  • Rainbow Sprinkles 

Directions

  1. First, line a large cookie sheet with parchment paper and set aside.
  2. Next, add 4 cups of Chex Rice cereal to a large mixing bowl and set aside.
  3. In a small mixing bowl, add your butter and microwave in 20 second increments. Once it's melted, add your granulated sugar and continue to microwave in increments of 20 seconds until sugar is fully dissolved. Then, add a splash of vanilla.
  4. Pour sugar and butter mixture over your Chex cereal and mix thoroughly until evenly coated.
  5. Sprinkle with your powdered sugar and mix again.
  6. Add your mixture to the parchment lined baking sheet and let it cool for 5-10 minutes. 
  7. Once cooled, add your Lucky Charm cereal to your baking sheet and mixed together.
  8. Melt white chocolate chips in the microwave in 2 second increments or until smooth.
  9. Pour over leprechaun bait and mix with a mixing spoon. Be prepared this part is a little bit messy and sticky.
  10. Add to the fridge to set up for 30 minutes to an hour.
  11. Lastly, remove from the fridge, cut into 16 pieces and enjoy.
