This Light Creamy Beef Stroganoff is perfect for a quick, weekday family dinner and it takes less than 30 minutes to make. Definitely a classic and comfort meal my family loves.
There are many variations of beef stroganoff. Of course, my recipe is going to be the absolute best. That's a given. I'm not going to tell you that mine's different, because really, it isn't. There are just little changes I made to make this the light version, but it's still delicious. No, really! Family tried and tested.
The great thing about this dish is that it can be doubled or tripled up to save for tasty leftovers throughout the week. Some weeks I have it all together and others, I need a quick dinner idea. So this is for any of you struggling to find a one pan, easy meal. To make this meal complete, I would add some veggies on the side like broccoli, green beans, zucchini - whatever you like.
This means it’s a lower calorie or healthier version of the original recipe. Some also may refer to this as the “skinny” version but I prefer the word “light.” Of course beef stroganoff is great, but if I can have it taste the exact same but less calories, I’m going with the lighter option. That way I can fit a dessert or sweet in later to my day. It’s all about balance!
It's totally up to you. I used sirloin steak but I've seen it made with ground beef, chicken, pork tenderloin, etc.
First, cook your egg noodles as directed and set aside.
Cook the sirloin steak in a medium pan.
Next, add in cream of mushroom soup, garlic powder, salt and pepper.
In a separate bowl, add egg noodles, steak and stir.
Lastly, add 1/2 cup plain greek yogurt and stir.
Serve and enjoy!
