Today we are going back in time and making an Ambrosia Salad. Do you all remember this? It's one of my absolute favorite things to make. Any time I think of Ambrosia Salad, I automatically picture a little granny bringing it to a potluck or baby shower - and that's exactly how I feel. I'm always so excited to bring it too. While there is tons of ways to make it, I made the "light" version of it. It reminds me of my Snickers Salad I made earlier.

Here's what you'll need:

  • Light Cream Cheese
  • Light Coolwhip
  • Can of Crushed Pineapple
  • Mini Marshmallows
  • Shredded Coconut
  • Walnuts
  • Bowl Set I use

Ingredients
  • 8 ounces Cream Cheese
  • 8 ounces Light Cool Whip
  • 20 ounces Crushed Pineapple
  • 1 cup Mini Marshmallows
  • 1 Shredded Coconut (No Sugar Added)
  • Garnish with Walnuts
Instructions
  1. Make sure your cream cheese and whipped topping are room temperature and add both to a bowl and mix together.

  2. Next, add in your crushed pineapple, marshmallows, shredded coconut and stir until well combined.

  3. Add to fridge for about an hour or until chilled.

  4. Lastly, garnish with some walnuts or your favorite nuts.
