I'm finally showing you hot to make my Spicy Tuna Sushi Bites! Simple, delicious and perfect for on the go. Which is me 90% of the time. I was inspired by Emily Mariko when her salmon, rice and seaweed dish went viral. At the time, I didn't have any salmon so I made do with what I had. Plus, I love canned tuna and I always have it in my cupboard for days I'm busy and need something quick and easy.
I usually make 2-3 servings at a time and store it in the fridge so I can easily grab and go on my way to work or for after the gym.
Now, since I am eating this 24/7, I have gotten a ton of messages on how I make mine! Feel free to make it your own or swap some stuff out but you'll find the recipe below with my macros.
I don't have a ton of seafood recipes on the blog but let me know if you would like more. The closest thing I have is this Shrimp Alfredo and Shrimp Tacos.
Spicy Tuna Sushi Bites
Here's what you'll need
Canned tuna
Jasmine Rice
Seaweed
Mayo (Preferably kewpie mayo but I didn't have any)
Sriracha
English Cucumber
Sesame Seeds
How to cook your rice
If you're always in a hurry like me, I suggest Trader Joe's frozen white or brown rice. It's super fluffy and cooked to perfection. Pop it in the microwave for 3 minutes, and voila! Perfect rice. The downside to this is that it only comes with 3 packs and can be bulky in your freezer. If you want to meal prep this for the week or make rice for more than yourself, I suggest using a rice cooker or over the stovetop.
First, wash and drain your rice until the water is clear.
Next, add equal parts rice and water and bring to a boil.
Cover, reduce your heat and simmer for 15 minutes.
Lastly, remove from the heat and let it sit, covered for 10 more minutes.
Do I have to use canned tuna?
Nope! This will actually work with any fish - raw or cooked. So you can use salmon, tuna, crab meat - totally up to you! I like it with crab meat a lot as well.
Does it matter which cucumbers I use?
It does not! I prefer the english cucumbers and I cut them up in little triangles by cutting it 2 ways. Any cucumber will work though. If you use a slicing cucumber, I just prefer to peel off the skin.
Seaweed to use
I use the Kirkland brand ones BUT these Amazon ones are just as good and more convenient if you don't go to Costco a lot. I'm there every week so it just makes sense for me to snag them. I also use these for to eat with my Spicy Kani Salad. If you want to make these bowls into a sushi roll, you will want to use this seaweed wrap.
Oh, and these are a great snack in general. My girls LOVE them. I swear they do. Check out this video my sister took of Sloan eating them. She's so cute and she ate 2 whole packs of them herself that night.
If you want to add volume to your meal, add cauliflower rice to your regular rice! Cauliflower rice is great, takes in flavor (if you add soy sauce to your rice) and can add great volume. You can also add more cucumber or shredded carrots to your meal.
