  • 1/4 cup Unsalted Butter
  • 1 cup Monk Fruit Sweetener
  • 1/4 cup Unsweetened Almond Milk
  • 1/2 cup Peanut Butter
  • 1/2 teaspoon Vanilla Extract
  • 1 3/4 cup Quick or Rolled Oats
  1. Line a cookie sheet with parchment paper.

  2. In a saucepan, melt down butter, milk and sugar.

  3. Boil for 2 minutes while whisking.

  4. Remove from the heat and stir in the peanut butter and vanilla until well combined.

  5. Next, add your oats in and stir.

  6. Then, take 1 tablespoon of cookie mixture and add to the parchment paper. Flatten slightly to make a circle.

  7. Chill in the fridge for at least 30 minutes before enjoying.
