Line a cookie sheet with parchment paper.
In a saucepan, melt down butter, milk and sugar.
Boil for 2 minutes while whisking.
Remove from the heat and stir in the peanut butter and vanilla until well combined.
Next, add your oats in and stir.
Then, take 1 tablespoon of cookie mixture and add to the parchment paper. Flatten slightly to make a circle.
Chill in the fridge for at least 30 minutes before enjoying.
