We have this French Toast Casserole every Christmas morning and it’s the perfect pairing to our savory items. My dad cooks up the bacon, eggs, hash browns and my sisters usually brings the French toast Casserole. 


This year I’ll be bringing the casserole but the light version! Or “skinny” version as some may say. Which, is what my generation grew up saying so I’m still learning new ways to say that it’s a lower calorie or healthier version. I think “light” or “healthier” can be my “skinny.”

You can also top this with my sugar-free homemade powered sugar and fresh fruit. I recently made my own powdered sugar when I made this Puppy Chow for the holidays. It was delicious and if it can be lower calorie, I'm here for it. A serving of your traditional powdered sugar can be up to 500 calories! I look at it as yes, that's fine once and a while but the Splenda version tastes the exact same. Plus, I'd rather use those 500 calories on something else like more fruit and veggies for my day!


Now, as much as I like to splurge over the holidays, by Christmas I’m honestly over it. I start to feel sluggish and tired. Mostly from the traveling, running around, stressing and not eating my best. So, I wanted to make a “light” version of one of my favorite Christmas brunch items. Day of, I’ll pair this with some fresh fruit or eggs and a side salad. 


Does anyone else love to pair side salads with every meal?


I love my side salad that I always make. It’s spinach, chopped romaine and my white wine vinaigrette. I seriously never get sick of it! It keeps my meals balanced and packed with nutrients from the spinach.

Why not just make french toast?

One, this is much more fun and cute. Secondly, it’s different, delicious and perfect for brunches. It’s easy to cut in multiple pieces for sharing! While french toast is great, this is somehow so much better.

What brand of bread did you use?

I used Nature's Harvest Light from Walmart. It's only 40 calories per slice!

Ingredients
  • 6 cups Bread (Cut into cubes and measure)
  • 4 Eggs
  • 1 cup Unsweetened Almond Milk
  • 1/4 cups Monk Fruit Sweetener
  • Dash of Vanilla Extract
  • Pinch of Salt
  • Dash of Cinnamon
Instructions
  1. Pre-heat your oven to 375 degrees.

    Or skip this step if you want to soak it overnight and bake it in the morning.
  2. French Toast Casserole

    Chop your bread into 1 inch cubes.

  3. In another bowl, mix together your eggs, milk, sugar, vanilla, cinnamon and salt. Whisk together.

  4. French Toast Casserole

    Add the custard mixture over your chopped bread and fold in with a light hand.

  5. You can bake now but I prefer to let it soak overnight and bake in the morning.

  6. Bake at 375 for 25 to 30 minutes.

  7. French Toast Casserole

    Let it cool, dust with some homemade powdered sugar and walden farms maple syrup and enjoy.
