Cornbread Stuffing Muffins are a great addition to Friendsgiving this year. They're quick, easy and so darn cute. A burst of flavor and crunch in each bite.
There are two things I love about my job as a food blogger, the crunch and the flavor. These take the cake for both categories. I think these are best for Friendsgiving because when I think of Friendsgiving I somehow always think of finger food. It's usually always a potluck and people are bringing a mix of things. This is something different, cute and will impress everyone with minimal effort from you.
Muffins are best fresh but if you need to re-heat, pop them into the oven at about 200 degrees for a few minutes.
If you happen to not like the crunch or apples or celery, you may leave them out. Personally, I think it's a great added flavor but to each their own! Another thing you can add in is sausage. If you're someone who likes meat in their stuffing, feel free to add in some breakfast turkey sausage or italian ground sausage. Other additions can also include nuts, cranberries or rosemary.

First, pre-heat your oven to 350 degrees. While that heats, chop your apple and celery.
Spray your muffin tin with olive oil spray.
In a bowl, mix together your stuffing mix, water, melted butter, apple, celery, parsley and stir together.
Add your mix to your muffin tin.
Bake for 20-22 minutes or until the tops are golden.
