My 90 Calorie Creamy Cucumber Salad is perfect as an easy, refreshing snack or side to any meal. It would be great paired with Trader Joe's Chicken Schwarma, rice and some pickled red onions. Tell me that doesn't sound like the perfect meal. Or as a side dish to your family's cookout.

I love this recipe because it's so flavorful, fresh and it's quick and easy to make. It's also packed with 12g of protein and only 90 calories. It's so simple yet so flavorful. Crisp and crunchy cucumber slices tossed in a creamy yogurt, white wine vinegar, seasoned with Monk Fruit sweetener, dill and garlic salt. This is quite possibly the easiest salad you'll ever make.

Here's what you'll need:

Cucumbers - You can use any cucumbers for this salad. Mini, persian, english, american - it doesn't matter. If you use american, be sure to peel them prior to making the salad. It's best to use fresh cucumbers. While they can last up to two weeks in your fridge, the fresher the better. If you notice your cucumber is dented or soft, it's time to throw it away.

Plain Greek Yogurt - I like to get the greek yogurt with high protein. If you are counting your macros, it may be hard to hit your protein goal so this would be a great snack for you. If you don't want to use greek yogurt, you can also use sour cream or mayonnaise just note that the calories and macros will change.

Dill - Of course it will be recommended to use fresh dill but if you don't have any the dried dill seasoning will work just fine.

White Wine Vinegar - I used white wine vinegar but if you don't have any, you can use white vinegar or apple cider vinegar.

Monk Fruit Sweetener - I like to use a sugar substitute because it's zero calories but if you want to use sugar, you can definitely still do that.

Garlic Salt - A great mix of garlic powder and salt. A definite staple in my pantry but you can always use salt and garlic powder separately.

Ingredients
  • 300 grams Cucumber (Sliced)
  • 100 grams Plain Greek Yogurt
  • 1 tablespoon White Wine Vinegar
  • 1 teaspoon Monk Fruit Sweetener
  • 1/2 teaspoons Dill
  • 1/2 teaspoons Garlic Salt
Instructions
  1. Slice your cucumbers and place them in a mixing bowl.

  2. In a separate smaller mixing bowl, mix together your greek yogurt, vinegar, Monk Fruit sweetener, dill and garlic salt. Whisk together.

  3. Gently fold your dressing in your cucumbers. Enjoy!
