I am obsessed with these Skinny Chocolate Peppermint Donuts. They are moist, sweet with a hit of peppermint - the absolute perfect combination.

I know some people don't like the combo of chocolate and peppermint - you all can enjoy my Apple Spice Donuts. But for those chocolate peppermint loving people, these are for you to enjoy and I'll be right there with you. My Rae can't have them but little Sloan was munching on them the other day. If she has something sweet, I always like to pair it with fruit or veggies to balance it out. I even do this for myself!

I really love my donut mold. If you've been here from the beginning, you know I loved to make my protein donuts in them as well. While I could turn them into muffins or cakes, I love the fact that I am eating a 100 calorie, delicious donut.

Now, if you want to make this a year round breakfast or dessert, you can always swap the crushed peppermint for sprinkles, crushed nuts or coconut flakes. Whatever your heart desires!

My family always does a Christmas brunch, so these would be perfect for that. My dad whips up the eggs, bacon, sausage and then the rest of us bring some sort of casserole or sweet treat. I'll be bringing these this year and I can't wait to see what everyone thinks of them.

Here's what you'll need:

Directions:

  1. First, pre-heat oven to 350 degrees.
  2. In a bowl, whisk together your eggs, milk and peppermint extract.
  3. Next, stir in your flour, cocoa powder, sugar and baking powder.
  4. Add your batter to a piping bag.
  5. Grease your doughnut tin.
  6. Using your piping bag, fill your donut molds.
  7. Bake for 10-12 minutes or until toothpick comes out clean.
  8. Melt your chocolate chips in a shallow bowl in 20 second increments or until smooth. Be careful to not overheat your chocolate.
  9. After your donuts cool, dip them in the chocolate topping and sprinkle with some crushed sugar-free peppermint candies.

  • 1 cup Flour
  • 1/2 tablespoons Peppermint Extract
  • 1 tablespoon Baking Powder
  • 57.3 grams Cocoa Powder (This comes to about 1/3 cup and 1 tablespoon.)
  • 1/4 cups Splenda Monk Fruit Sweetener
  • Sugar Free Peppermints or Candy Canes
  • 1/2 cups Lily's Chocolate Chips
