Quick and Easy Breakfast – Veggie Scramble

I love starting my day eggs and veggies. The eggs keep me satisfied, packed with protein and mixed with the veggies makes for a very satisfying breakfast! Also, I love any excuse to eat salsa.. spice is LIFE my friends. My go to veggies are of course, bell peppers and onions, but you can add whatever you like. For example, mushrooms, asparagus, broccoli, spinach, kale, I mean the possibilities are endless.  The great part about this meal is that you can have a huge plate packed with protein and veggies for around 200 calories! This is what we call volume eating and for me, this meal really sets the tone for the rest of my day.

Ingredients
  • 1 cup Egg whites
  • 2 Whole Eggs
  • 1 Small White Onion (Chopped)
  • 1 Whole Bell Pepper (Chopped)
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Pepper
Instructions
  1. Get your skillet smoking hot.

  2. Add a few sprays of olive oil. If you're not using the spray, be careful and measure out how much oil you use and add it to the calories at the end.

  3. Add in your bell pepper and onion and let it sit and cook for a few minutes. Do not stir yet. That's how you will get that yummy and beautiful char on your veggies.

  4. Add some salt and pepper to taste.

  5. Stir your veggies after a few minutes and let them cook for another couple of minutes. I like my veggies a little crunchy still so I don’t overcook them.

  6. Add your eggs and egg whites to a bowl and whisk.

  7. Once your veggies are just how you like it, go ahead and add your eggs to the pan and stir frequently.

  8. When your scramble is to your liking, remove from the heat and serve. I like to also use this for meal prep and take it to work. Add some salsa or tapatio and it's good to go!
