You won't believe how many calories are in this Protein French Toast and Egg Breakfast - 200 calories. Yes, only 200 for this hearty and healthy meal. I couldn't believe it after because I was so satisfied and didn't feel hungry at all.

If you're still hungry you can even add a few more pieces of french toast. It all depends where you want to spend your calories. I had a bigger midday snack this day but my breakfast was amazing. It was so yummy and filled with protein.

My new lifestyle is focusing on balance and let me tell you guys, it's been great. I think it's important to remember we can eat anything in moderation or even make a "healthier" version of it - which is what I did for this meal.

Here's what you'll need

Bread:

You can use any bread - white, wheat, sourdough, low carb bread, etc. Just be sure to accurately adjust the calories and macros for this recipe. I used Nature's Harvest Healthy Habits Light bread. Personally, I love it! It is 40 calories per slice, 5g of protein and 5g of fiber. I'm not a huge bread person so I don't really care too much about which kind I use, but I do like this one! I know people have their favorites so if you want to use white bread, use it!

Egg Whites:

Can you guys imagine me cracking eggs, taking out the egg white and saving the yolks for later? Yeah, me neither. I buy the carton of egg whites at my local grocery store so it's quick, easy and I don't have a bunch of egg yolks left. I love eggs and for the most part I use the whole egg but in this case, I just use egg whites. I also like to have the carton around because they're low calorie and I can add them to my regular eggs for some more volume.

Skinny Syrup:

I know this sounds weird but it works. Use whichever flavor is your favorite. I like to use caramel in this recipe! I get them from my local TJ Maxx of Home Goods. They always have a ton of different flavors to choose from.

Monk Fruit:

I like to use the Splenda one but there are also other brands that make Monk Fruit Sweetener. I get mine from Amazon, you can find it here.

Cinnamon:

I use regular cinnamon from my local grocery store! If you aren't doing sugar free, you can actually buy a cinnamon and sugar mix.

The Scramble

Broccoli:

I always keep frozen broccoli in my freezer. It is a staple I always have to have in there since I eat it so much. For this recipe, you can use frozen or fresh but I used frozen.

Seasoning:

I kept it simple and used salt and pepper but feel free to add in some garlic powder, onion powder and whatever else you like.

Directions:

  1. In a shallow dish, mix 50g of egg whites with 1 tablespoon of Caramel Skinny Syrup.
  2. Next, heat a sauce pan to medium high heat on the stove.
  3. Dip your bread into your egg wash, soaking up as much of the egg as you can.
  4. Cook on each side for a few minutes.
  5. In another bowl, mix together 150g of egg whites with broccoli, salt and pepper. Tip - if you want your eggs to be extra fluffy, whisk or blend them until they are white and fluffy before adding in the broccoli.
  6. Scramble in a pan on medium high heat.
  7. In a small bowl, mix together your monk fruit sweetener and cinnamon.
  8. Lastly, add Walden Farms maple syrup and your cinnamon and monk fruit mixture over top.
