Sweet and Salty No Bake Peppermint Nut Clusters are a delicious and fun treat for the holidays. With the prep time being 10 minutes and popping them in the fridge for 30 minutes, it contains very minimal effort!
As we approach the Holiday season, I had to add the chocolate and peppermint but for Fall I made my Pumpkin Nut Clusters. They were so good and a huge hit at Thanksgiving. I can't even believe how easy and quick these are to make. In the past years, I've been asked how long it took me to prepare all 60 that I made and when I told them, they were shocked. Listen, by now you guys know me. Like really KNOW me. I like to make things easy but look like I put a ton of effort into it! Making things cute and adding decor always helps with that.
These would be perfect for a party or even as an addition to a gift. Add it to one of these cute holiday boxes and make a home movie box. You can have the Peppermint Nut Clusters, a few bags of popcorn, a Holiday movie, Homemade Reese's, some seltzer's and a nice blanket. Depending on how much you want to spend, this projector would be perfect! I actually would love this gift. I'm such a stay at home and watch movies with my girls and Peter type of person.
Directions
In a mixing bowl, add your walnuts, pecans and shredded coconut. Then, mix.
In a separate bowl, add 1 cup of chocolate chips and 1 tablespoon of coconut oil.
Microwave the mixture in 20 second increments. Stir in between each time until smooth and well combined.
Add 1/2 tsp peppermint extract.
Pour your chocolate over the nut mixture and toss together.
Add 2 tablespoons to parchment paper or cupcake liners.
Chill in the fridge for about 20 to 30 minutes.
Lastly, top with cute sprinkles or crushed candy canes. I found sugar free ones! This is optional but of course you know I think it's necessary because food always taste better when it's cute.
