Low Calorie Buffalo Zucchini Stuffed Boats

These quick and easy Low Calorie Buffalo Zucchini Stuffed Boats were so yummy. They definitely have a kick to them so if you're not into the spice, you can always swap the buffalo sauce with my homemade marinara sauce. They only take about 40 minutes total to prep and cook so it's perfect for an easy dinner after work. They can also be prepped for the week as well.

Zucchini is one of my favorite veggies because it's not only delicious, but it's low in calories and keeps you satisfied. I prefer to volume eat with nutritious foods because it keeps me full and allows me to incorporate more veggies into my diet.

I've also been loving buffalo sauce lately too. Not that it's anything new but you know when you haven't had something in a while and you forget how good it is? Yeah, that's me right now with buffalo sauce.

Oh, if you haven't already, you need to try my cauliflower buffalo wings. To die for, I tell you! I've made them before but this time it was just right. I finally mastered it, so tell me how I did. I usually pair it with my homemade blue cheese dressing but ranch works too.

Now that I'm thinking of it.. If you are a saucy gal like me, you can pair the ranch or blue cheese dressing with the zucchini boats as well. I just love sauce. I'm not even trying to be all sales-y and try to sell my book. I genuinely am obsessed (add this to the list of my obsessions) with sauce. But, I do prefer to make things at home because it is better for you and in the long run saves money.

LOW CALORIE BUFFALO ZUCCHINI STUFFED BOATS

HERE'S WHAT YOU NEED:

  • Zucchini
  • Ground turkey
  • Frank's Buffalo Sauce
  • Greek Yogurt
  • Mozzarella Cheese

INSTRUCTIONS:

  1. Pre-heat your oven to 400 degrees.
  2. In a medium pan, brown your ground turkey with a pinch of salt and pepper. This usually takes about 8 to 10 minutes and then remove from heat.
  3. Wash your zucchini and cut them in half longways. Then, with a spoon, hollow out each zucchini half.
  4. Grease a large baking dish or pan and place your eight zucchini boats inside.
  5. In a medium bowl, combine 1lb of cooked ground turkey, half a cup franks buffalo sauce, and 1/3 cup of greek yogurt.
  6. Fill your zucchini boats evenly with your mixture.
  7. Top with mozzarella cheese.
  8. Bake in the oven for 20 minutes.
