Ingredients
  • 1 Yellow Onion
  • 1 Pinch of Salt and Pepper to taste
  • 2 ounces Tomato Paste
  • 28 ounces Whole Tomato with Liquid
  • 2 cups Vegetable Broth
  • 1/2 cup Cannellini Beans
  • 2 tablespoons Unsalted Butter
  • 1 teaspoon Swerve Brown Sugar
  • 1 teaspoon Onion Powder
  • 10-15 Basil Leaves (Optional)
Instructions
  1. In a soup pan, add olive oil and onions. Cook for 7-10 minutes on medium heat or until translucent. 
     
  2. Add tomato paste and cook for about 30 seconds.
     
  3. Next, add tomatoes and vegetable broth. 
     
  4. Bring your mixture to a simmer and cook for 30 minutes. Stir occasionally. 
     
  5. Remove the pot from the heat and let it cool for a few minutes.
     
  6. Then, you're going to add your mixture to a blender. Add your beans, butter, sugar, salt and pepper. 
     
  7. Blend until smooth.
     
  8. Add in basil leaves and blend again until smooth.
     
  9. Lastly, this is optional but I like to top it off with a dollop of greek yogurt and basil leaves.
