Homemade Spooky Spaghetti Squash

My Homemade Spooky Spaghetti Squash is a great way to sneak in some veggies around a time filled with candy.

This is great for a family dinner and if you need to trick your kids into eating their veggies. We had this the other night and it's so cute to see the girls get all giggly and excited to eat these themed meals.

Of course, you can make this with regular pasta or combine both but I actually really enjoy spaghetti squash! This lifestyle is about balance and making food fun. I will always promote that. For me, I genuinely enjoy eating the things I do. I absolutely love veggies and they keep me full.

For this recipe, I would highly recommend adding a protein. My favorite protein to add to this is ground turkey or ground beef. As always, feel free to make it your own and add what you like! The one thing is though, you have to have it with my homemade marinara sauce. It's so good! I'm such a fan of homemade sauces and spices so I created my own mini e-book.

Homemade Spooky Spaghetti Squash

SERVING SIZE:

  • 1/2 of a squash
  • 1/2 cup marinara
  • Sprinkle of parmesan cheese
  • Basil leaves for garnish

HERE'S WHAT YOU'LL NEED:

  • 2 spaghetti squash
  • 2 cups of my homemade marinara
  • 1/4 cup parmesan cheese
  • Basil for garnish
  • Halloween candy eyes for fun

DIRECTIONS:

  1. Pre-heat your oven to 400 degrees.
  2. Cut the spaghetti squash in half lengthwise and remove the seeds.
  3. Rub the inside of the spaghetti squash with a little bit of olive oil, salt and pepper.
  4. Place the spaghetti squash face down on a parchment paper lined baking sheet.
  5. Bake in the oven for about 45 to 50 minutes.
  6. Remove from the oven and carefully flip the spaghetti squash over. With a fork, shred away at the spaghetti squash and it will create small like noodles.
  7. Top with a half a cup of marinara, parmesan cheese, basil and don't forget the candy googly eyes.
  8. You can serve this on a plate or keep it in the spaghetti squash that serves as a bowl. I think it looks really cute and fun but you can do whatever you like.
  9. Feel free to add whatever protein you like. My favorite is ground turkey!
