Frugal Friday Poor Man's Ceviche is going to have your mind BLOWN. It is fresh, crunchy, and super low calorie.
Don't get upset at the name - I got this recipe from my coworker Ben and he told me I absolutely have to call it this. He said I needed to share it for my Frugal Friday series and he was so right - I can confidently say that this definitely needed to be shared with the world. It's cheap, delicious, super low calorie, and high protein.
The best part of this being low calorie and high protein is that you can build on it. It can either stay how it is and be a mid day snack or make it into a meal. If I were to make it a meal I'd maybe add some veggies and a taco or two on the side.

First, chop all your veggies. If you don't have this veggie chopper from Amazon, you need it now! I don't know why it took me so long to buy but it's a necessity, I swear.
Next, add your tuna, veggies, lime, salt, and pepper to your mixing bowl and mix.
Over medium high heat, lightly spray your pan with cooking oil and cook your tortillas for a few minutes on each side or until crispy - like a tortilla chip or tostada.
Top your ceviche with some tapatio or your favorite salsa, dip, and enjoy!
