My Fresh Chicken Spring Rolls are packed with protein, veggies and rolled in lettuce with rice paper for a tasty snack, meal or appetizer. They’re so easy to make and it’s great to switch it up once and a while.
You can store them in the fridge for an easy snack on the go for the next 2-3 days. Just be sure to individually wrap them in plastic wrap in an air tight container or the rice paper will dry out.
These can be made with chicken, fish, shrimp, veggies, tofu, just about anything. I've even seen some people get creative and make "cheese burger" spring rolls. When I've ordered them from restaurants, they also include rice noodles in them which is also delicious.
The rice paper can be very tricky to wrap because it gets sticky and can tear easily. One thing to remember is that you don't need to soak it in the water to become sticky. Grab a plate, add a thin layer of water, completely coat the rice paper and gently add it to a cutting board or flat surface. From there, assemble your spring rolls and it will become the sticky texture.
