Delicious Keto Blueberry Muffins

It's not an everyday thing, but when I do whip up these delicious keto blueberry muffins my girls go crazy over them. As you know, I love making meals that are easy and on the go so these are perfect for my family and I. I will especially make these when I have a sweet tooth and want it to pair with my morning coffee. It's always a debate between my protein waffles or these muffins. The plus to making the muffins over the waffles is that they last longer and a little easier to store if you have a jam packed fridge like myself.

These are also great to bring to a brunch potluck or have at your own. Finger foods are best because they're also easy to pack and send home if you don't want a bunch of extra food at your house. We all know how that goes.

One muffin is only 215 calories but it definitely keeps you full. I like to pair it with my coffee and a bowl of fruit on the side. Or you can do a low calorie omelet or my veggie scramble and that will equal to less than 500 calories which is still pretty normal for a full meal. It depends how hungry you are in the morning but I will grab a muffin, fruit my coffee and head out.

Making these blueberry muffins always remind me of when I was a young girl and would make them with my mom. It's always fun to do things I did as a child with my girls. Raelyn does most of the work but my youngest Sloan helps out where she can.

Here's what you will need:

  • 2 1/2 cups almond flour 
  • 1/2 cup erythritol
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup coconut oil 
  • 1/2 cup unsweetened almond milk
  • 3 large eggs 
  • 1/2 teaspoon vanilla extract
  • 3/4 of a cup of blueberries

You can substitute the coconut oil for melted butter or unsweetened apple sauce but keep in mind this will change the macros.

Ingredients
  • 2 1/2 cups Almond Flour
  • 1/2 cups Erythritol
  • 1 1/2 teaspoons Baking Powder
  • 1/4 teaspoons Salt
  • 1/3 cups Coconut Oil
  • 1/2 cups Unsweetened Almond Milk
  • 3 Large Eggs
  • 1/2 teaspoons Vanilla Extract
  • 3/4 cups Blueberries
Instructions
  1. Preheat your over to 350 degrees.

  2. In a large mixing bowl, combine your dry ingredients and whisk together,

  3. Melt your coconut oil. You can do this in a microwave safe bowl in the microwave for 10 second intervals. Mix and heat until fully melted.

  4. Add in the remaining ingredients. This will be your melted coconut oil, almond milk, eggs and vanilla extract. Mix together.

  5. Gently fold in your blueberries.

  6. Line your muffin tin with parchment paper liners.

  7. Bake for 20 to 25 minutes. You can also check on them by sticking a toothpick in a muffin and if it comes out clean, they're ready.
