This low calorie and easy to prepare Delicious Fall Harvest Bowl has been a smash this week for family dinners. I made some extra to store in the fridge for emergency meals for the week.

I like to keep a few family meal preps for days I am completely slammed with work or out running errands. This makes life so much easier. It can be difficult juggling a job, business and kids so dinner sometimes is left overs and that's okay. Shoot, being a mom in general is tough. Shout out to my moms out there! You're doing great. Plus, our kids probably can't tell leftovers versus the first night we ate it.

Another thing I love about these bowls are that it's so easy to make and so colorful. Get a baking sheet, heat your oven to 450 degrees, chop your favorite fall veggies and protein and bake for 25 minutes. Serve with one of my homemade dressings and enjoy. That's it. It's really that simple.

These bowls are so easy and customizable. Whether you're doing keto, low calorie, vegan or vegetarian, you can add your favorite colorful veggies onto a baking sheet. You can top it off with a dressing of your choice but I decided to use my homemade ranch.

I love that it's savory but there is a touch of sweetness with the sweet potato. The bowls keep you full and satisfied for longer since they're packed with protein, fat and healthy carbs.

Delicious Fall Harvest Bowl

HERE'S WHAT YOU'LL NEED:

  • A head of purple cauliflower
  • Medium sweet potatoes
  • Yellow onion
  • Brussel sprouts
  • Turkey sausage link
  • Onion powder
  • Galric powder
  • Paprika
  • Optional: Kale or Spinach

SERVING SIZE:

This made 3 meal with some veggies left over. I platted 4 ounces of turkey sausage, 3 ounces of sweet potato, 1/3 cup brussel sprouts, 1 cup of cauliflower. This totals to about 320 calories for the meal. You can definitely eat two servings of this to make it a meal or you can also eat some snacks on the side.

Ingredients
  • 1 Head of Purple Cauliflower
  • 2 Medium Sweet Potatoes
  • 1 Yellow Onion
  • 12 ounces Brussel Sprouts
  • 12 ounces Turkey Sausage Link
  • 1 tablespoon Onion Powder
  • 1 tablespoon Garlic Powder
  • 2 teaspoons Paprika
  • 1 cup Kale (Optional.)
Instructions
  1. Preheat oven to 450 degrees.

  2. Chop all of your vegetables and turkey sausage into about 1/2-1 inch cubes.

  3. Line a large baking dish with parchment paper. Lay down your vegetables and turkey sausage.

    Top with olive oil and seasonings. Toss and then bake at 450 for 20-25 minutes

    Optional: Top with pomegranate seeds and my homemade ranch.
