Broccoli and Cheese Breakfast Casserole

This healthy Broccoli and Cheese Breakfast Casserole is only 215 calories and packed with 28g of protein. It's an amazing way to start your morning - add some toast or fruit and you have a well balanced meal. I love to pair mine with two pieces of toast with cream cheese and everything bagel seasoning.

It has eggs, mozzarella cheese, cottage cheese to keep it moist and broccoli. With any of my recipes, feel free to make it your own and give a personal touch to it. You can pack it with even more veggies without adding a ton of calories either. For example, mushrooms, bell peppers, onions, spinach, tomatoes - would be the perfect addition.

Don't forget to also top it off with some hot sauce! If you're not a fan of hot sauce, you can use a mild salsa, green onions, cilantro or some more cheese. I think a sprinkle of bread crumbs would be good as well.

The casserole bakes in the oven for 45 minutes. Like most food, not counting pizza, is best when fresh but still reheats pretty close to perfection. You can pack it for breakfast, a snack or even lunch time. Its so yummy, cheesy and keeps you full all morning.

Here's what you'll need:

  • Broccoli
  • Mozzarella Cheese
  • Egg Whites
  • Low Fat Cottage Cheese
  • Coconut Flour
  • Baking Powder
  • Salt
  • Mrs. Dash
  • Mixing Bowls
  • 11 x 15 Baking Dish - this one is on sale right now and I love that it comes with a lid!

Directions:

  1. In a large bowl, add your 6 whole eggs and 600g egg whites and beat with an electric mixer on medium/high for about 2 minutes.
  2. In a small bowl, combine dry ingredients - coconut flour, baking powder and salt and gradually add in egg mixture.
  3. Next, add in your cottage cheese and shredded cheese.
  4. Before adding in the mixture, add your broccoli to the baking dish. If it's frozen, I like to pop it in the microwave beforehand for about 5 minutes.
  5. Add your mixture to a 11x15 baking dish.
  6. Lastly, bake for about 45 minutes at 350 degrees and then enjoy!
