My Aunt's famous Spinach and Feta Stuffed Mushrooms are a crowd pleaser for sure. This will be a perfect side dish or appetizer for your New Years Eve party. Grab, go and covid friendly!
Even if you're someone who isn't the biggest fan of mushrooms, this dish will have you questioning yourself! It is so yummy. Packed with tons of spinach and creamy cheese stuffed into a delicious button mushroom. I would make these every week if I could but I know my family likes to mix things up.
A thought came to me the other day. I don't think the recent generation appreciates family recipes like we used to and still do. My Aunt sharing this recipe with me is so special and makes it THAT much better. Plus, she has years of people telling you how amazing they are and to bring them whenever there is a potluck. Of course you can just google Spinach and Feta Stuffed Mushrooms but this one is the best. Made with lots of love and will be passed down to my girls when they're older.
So today, I am sharing with you another homemade family recipe. I hope you enjoy it!
Try my Mother in Law's Simple Chicken Salad!
Spinach and feta fan? You have to try my Spinach and Feta Frittata I just made!
Pre-heat your oven to 375 degrees.
Wash and dry your mushrooms.
Pop out the stems, chop and set both aside. You will need about 1/2 cup.
Add oil to a medium sauce pan.
Add your spinach and cook for about 2-4 minutes or until wilted.
Add in your garlic, chopped mushrooms stems and sauce for 5-6 minutes.
Add feta cheese and Italian bread crumbs.
Add onion powder, salt and pepper and set aside.
Stuff your bottom mushrooms with your mixture and add them to a greased baking dish.
Sprinkle with parmesan cheese.
Bake in the oven at 375 for 20 minutes.
