Ingredients
  • 1 tablespoon Oil
  • 2-3 cups Spinach (Fresh or frozen works)
  • 1/2 cup Crumbled Feta Cheese
  • 2 Cloves of Garlic (Minced)
  • 12 Button Mushrooms
  • 2 tablespoons Italian Breadcrumbs
  • 2 tablespoons Parmesan Cheese
  • 1 teaspoon Onion Powder
  • Pinch of Salt
  • Pinch of Pepper
Instructions
  1. Pre-heat your oven to 375 degrees.

  2. Wash and dry your mushrooms.

  3. Spinach and Feta Stuffed Mushrooms

    Pop out the stems, chop and set both aside. You will need about 1/2 cup.

  4. Add oil to a medium sauce pan.

  5. Spinach and Feta Stuffed Mushrooms

    Add your spinach and cook for about 2-4 minutes or until wilted.

  6. Add in your garlic, chopped mushrooms stems and sauce for 5-6  minutes.

  7. Spinach and Feta Stuffed Mushrooms

    Add feta cheese and Italian bread crumbs.

  8. Add onion powder, salt and pepper and set aside.

  9. Spinach and Feta Stuffed Mushrooms

    Stuff your bottom mushrooms with your mixture and add them to a greased baking dish.

  10. Spinach and Feta Stuffed Mushrooms

    Sprinkle with parmesan cheese. 

  11. Bake in the oven at 375 for 20 minutes.
