In a shallow sauce pan, add 1 cup of cold apple cider and top with one envelope of Knox gelatin. Let it bloom for about five minutes.
Then, bring the mixture to a simmer and stir until the gelatin is fully dissolved and remove from heat.
Add 1 cup of fireball cinnamon whiskey and stir.
Grab a large measuring cup with a spout and fill your mini cups.
Let them set in your fridge for 2 to 3 hours.
Optional: you can top with a little bit of whip cream and cinnamon before serving or serve as is.
