These delicious Bacon Parmesan Brussels Sprouts wrap up the last side dish to my Thanksgiving meal I made. I included my 3 favorites - Creamy Green Bean Casserole, Low Calorie Pumpkin Pie and Cauliflower Mash.

These brussels sprouts are so yummy, full of flavor and roasted to absolute perfection. Plus, it comes with all the nutritional benefits that are included in fresh veggies. Trust me, even if someone says they don't like brussels sprouts, they will be asking you for this recipe.

One thing I am always trying to do is get everyone to eat more veggies! They are packed with vitamins A, C, and K, have tons of antioxidants and great for volume eating. They are also a great source of iron and fiber as well.

While if eating plain veggies is what you like, then do you but I like to make them more enjoyable for myself. You may say "Janelle, these have bacon and parmesan in this dish, is it really still healthy?" Listen, we are working on balance and balance means if I am eating brussels sprouts, I am eating the bacon and parmesan too.

The great thing about brussels sprouts is that it can take on so many different flavors. For example, you can do it with a creamy dijon, spicy sriracha, honey balsamic, sweet chili and so much more.

How to get them perfectly crispy:

Personally, I like my brussels sprouts crispy. I love the little pieces that flake off and get somewhat burnt. In order to achieve this, you need to heat your cast iron to high heat. Once it is smoking hot, add in your oil and then your brussels. Now, take some tongs and make sure they are all flipped over on their flat side. Stir them and let them sit for a few more minutes before putting them in the oven.

Ingredients
  • 2 Bags of Brussels Sprouts
  • 1/2 Pack of Bacon
  • 3 tablespoons Olive Oil
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Pepper
  • 1 tablespoon Garlic Powder
  • 1/4 cups Parmesan Cheese
Instructions
  1. In a pan, cook half of a pack of bacon. 
  2. Chop the bacon into bite size pieces and set aside on a plate with a paper towel. This will drain the grease.
  3. Cut the ends off of the brussels and then in half.
     
  4. Get cast iron smoking hot and pre-heat your oven to 400 degrees.
     
  5. In a bowl, mix together your brussels, salt, pepper and garlic powder.

  6. After the cast iron is hot, add in 2 tbsps of oil and your brussels. Try to get as many faced down as you can. DO not put the oil in while the cast iron is heating up. You will burn the oil.
     
  7. Sear for 3-5 minutes. 
     
  8. After 3 minutes, check on the brussels. If there is a good sear, toss and cook for 2 more minutes.
     
  9. Add to the oven and cook for 15 minutes.
     
  10. Remove from the oven and add chopped bacon and half a cup of parmesan cheese.
     
  11. Add back into the over for 10-15 minutes. Let cool and then enjoy!
