I made 5 Minute Ramen Noodle Salad for the first time and it was so easy, convenient and delicious. All you need is a bag of coleslaw, sliced almonds, chicken and crushed ramen noodles.
This salad is packed with flavor and a great way to use leftover chicken and pull together a quick meal. I like to add some mandarin oranges, green onion and edamame but these steps are optional. I love to pack this on a day where I’m in a rush and want to spice up my salad.
First, start by mixing up the dressing. In a mason jar, add in rice vinegar, olive oil, soy sauce, granulated garlic, Splenda or sugar substitute and salt and pepper. Next, break up the ramen noodles into bite size pieces and add them to a mixing bowl. Add in the coleslaw, almonds, chicken thighs and I used mandarin oranges as well. Drizzle the salad dressing into the bowl and toss until well combined.
In a large mixing bowl, add coleslaw, almonds and crushed ramen noodles and mix.
In a small mixing bowl or mason jar, add your rice vinegar, olive oil, soy sauce, granulated garlic, sugar substitute and dash of salt and pepper.
Drizzle dressing onto salad and mix well.
