5 Minute Ramen Noodle Salad

I made 5 Minute Ramen Noodle Salad for the first time and it was so easy, convenient and delicious. All you need is a bag of coleslaw, sliced almonds, chicken and crushed ramen noodles. 

This salad is packed with flavor and a great way to use leftover chicken and pull together a quick meal. I like to add some mandarin oranges, green onion and edamame but these steps are optional. I love to pack this on a day where I’m in a rush and want to spice up my salad.

Hot to Make Ramen Salad

First, start by mixing up the dressing. In a mason jar, add in rice vinegar, olive oil, soy sauce, granulated garlic, Splenda or sugar substitute and salt and pepper. Next, break up the ramen noodles into bite size pieces and add them to a mixing bowl. Add in the coleslaw, almonds, chicken thighs and I used mandarin oranges as well. Drizzle the salad dressing into the bowl and toss until well combined. 

Recipe Tips

  • Break up them ramen noodles in the bag with your hands, the end of a table, knife or spoon.
  • For added flavor, you can toast the almonds over the stove for a few minutes.
  • Broccoli slaw can also be substituted for coleslaw if you do not have it on hand.
  • I used chicken but you can also use salmon, shrimp or steak.
  • If you want to prep ahead, keep the noodles and dressing separate so it stays fresh and crunchy. 
  • If the dressing is prepared in advanced be sure to shake well before next use.

Here's what you'll need:

  • 16 oz Bag of Coleslaw
  • 1/4 cup of Sliced Almonds
  • 1 Package of Crushed Ramen Noodles
  • 8 oz of Chicken Thighs
  • Large Mixing Bowl
  • 1/4 cup Rice Vinegar 
  • 1/4 cup Olive Oil
  • 2 tbsp Soy Sauce
  • 1 1/2 tsp granulated garlic
  • 1 1/2 tsp Splenda or Sugar Substitute 
  • Dash of Salt and Pepper 

Directions

  1. In a large mixing bowl, add coleslaw, almonds and crushed ramen noodles and mix.
  2. In a small mixing bowl or mason jar, add your rice vinegar, olive oil, soy sauce, granulated garlic, sugar substitute and dash of salt and pepper.
  3. Drizzle dressing onto salad and mix well.
  4. Optional - add in mandarin oranges, edamame or green onions.
